Mezcal San Cosme

The piñas (heart of the agave plant) are baked in ovens, and then mashed by a large stone wheel (tahona) which is pulled around by a mule. Once the juice is extracted it is placed in wooden vats to be fermented for 48 hours. The double distillation utilises a traditional copper pot still, removing theunwanted impurities, leaving only the flavourful ‘heart’ of the spirit.
On the nose Mezcal San Cosme presents an enticing agave aroma with hints of caramel and wood. Upon tasting it offers a gentle mouth-coating feel, with distinct and remarkable flavours of smoky agave mixed with leather and earth. It finishes spicy, warm and pleasant.
