Koch group emerged in 2009 as a project of recovery and boosting the traditional mezcal, a year after developing a business profile. Their main goal has been from the beginning to spread as widely as possible mezcal and its organoleptic characteristics. Hence the idea that Koch El Mezcal is liquid art emerges. Koch are fabulous producers who pride themselves on bringing modern efficiency to the production methods of mezcal while also focusing on reducing their impact on the environment. They ensure agave self-sufficiency, the sustainable use of water and forest resources, and proper waste management systems are used.

Production:

Mezcal is obtained through distillation of previously fermented sugars agaves. Its development is a complex process, transmitted from generation to generation empirically and consists of six major steps: planting, harvesting, cooking, grinding, fermentation and distillation. The terroir is understood as defined geographical space defined by environmental factors (soil, altitude, climate, etc.) and cultural. For this reason Koch have focused on working with different people of Oaxaca to create identity of each zone in the association of certain flavours and aromas with specific locations. This 100% Coyote mezcal is from San Baltazar Guelavila region, double distilled, agave matured for 12 years.

Tasting Notes:

A discreet mezcal with caramel aroma, herbal, earthy flavours. Light spices and wood, sweet fruity finish.
